Sweeten Your Beltane Celebration with Homemade Honey Cake

Ingredients:

  • 2 cups of flour

  • 2 teaspoons of baking powder

  • 1/2 teaspoon of salt

  • 1/2 cup of unsalted butter, softened

  • 1/2 cup of sugar

  • 3 eggs

  • 1/2 cup of honey

  • 1/2 cup of milk

  • 1 teaspoon of vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition.

  4. Add the honey, milk, and vanilla extract to the butter mixture and stir until combined.

  5. Gradually stir in the dry ingredients until the batter is smooth and well mixed.

  6. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

  8. Once the cake has cooled, you can dust it with powdered sugar or drizzle it with honey for an extra sweet touch.
