Cool Cinnamon Mint Tea
A refreshing tea to serve iced on hot summer days.
Ingredients:
1/2 cup dried mint - spearmint is best
1 cinnamon stick
2 whole cloves
1tsp dried orange peel
3 cups filtered water

Instructions:
Bring filtered water to a boil
Add cinnamon, cloves, and orange peel. Boil for one minute.
Remove from heat. Stir in mint and steep 10-15 minutes.
Strain and chill in refrigerator.
Serve over ice
If desired sweeten with honey
To make this tea. a bit more special, freeze slices of fresh orange and add along with ice cubes and a sprig of fresh spearmint to a pitcher to serve to family and friends gathered to celebrate Lammas.
