Imbolc Dandy Lemon and Poppy Seed Bunt Cake

No sabbat is complete without a celebratory dessert! This light and fluffy bunt cake is filled with bright, tangy flavor and a lovely sunny color. Where I live, dandelions abound in the early days of spring and I am able to harvest fresh ones to use in this cake. If your weather has not yet turned, dried dandelions are perfect too! If harvesting your own, please always follow best practices for foraging and wildcrafting - stay away from lawns, roadsides, and areas where herbicides may have been sprayed.

Dandy Lemon and Poppy Seed Bunt Cake Recipe

Heat oven to 350 degrees with the rack in the lower middle position. Grease a bunt pan and set aside.

Ingredients:

3 cups cake flour

1 tsp salt

1 tsp baking powder

1/2 tsp baking soda

1/4 cup poppy seeds

1 cup washed and separated dandelion petals - remove green base from the flower

8 TBSP unsalted butter

1 1/2 granulated sugar

4 eggs

1 tsp vanilla extract

1/2 cup fresh lemon juice - about 2-3 lemons worth

Lemon zest of two large lemons

1 cup buttermilk

Instructions:

  1. Whisk flour, salt, baking soda, baking powder, and poppy seeds.

  2. In a separate bowl, beat butter and sugar together until creamed. Add eggs and vanilla, continuing to beat.

  3. Scrape down sides and bottom of the bowl before adding lemon juice, dandelion petals, and zest and mixing.

  4. Slowly add in buttermilk until all is well incorporated.

  5. On low speed, gradually add in the flour mixture until just mixed. Do not over mix.

  6. Pour batter into the greased bunt pan and bake until a toothpick comes out clean, approximately 45 minutes. You may wish to lightly tent the cake in aluminum foil half way through baking if the top is darkening too quickly.

  7. Allow to cool, inverted in the pan on a metal rack

  8. If desired, glaze with a mixture of 2 TBSP lemon juice and 1/2 cup confectioners sugar and decorate with fresh dandelions.

Allow the cake to cool completely before serving. This is a lovely cake to enjoy this Imbolc with a warm cup of black tea and some good friends over for a visit.
