Buttery Maple Cookies

I love the flavor of a maple and nothing quite summons up feelings of Yule in the woods at a cabin quite like these buttery maple cookies. These are an excellent departure from the typical Christmas cookie flavors.
Buttery Maple Cookies
Ingredients:
2 1/3 cups all purpose flower
1 tsp baking soda
1/2 tsp salt
4 TBSP unsalted butter
1 cup dark brown sugar
1 large egg, room temperature
1/3 cup pure maple syrup
1 tsp maple extract
1 tsp vanilla extract
1 cup chopped pecans (optional)
Icing:
2 TBSP unsalted butter
1/3 cup pure maple syrup
1 tsp maple extract
1 cup confectioners sugar

Instructions:
Whisk flour, baking soda, and salt until well combined.
Cream butter and sugar until smooth. Beat in egg, maple syrup, maple and vanilla extracts on high speed until silky smooth.
Add in dry ingredients and mix on low until just combined.
Chill dough while preheating oven to 350 degrees.
Roll dough into 1” balls and bake 12-14 minutes until just lightly browned, but still soft looking.
Allow cookies too cool completely before icing.
Icing: Soften the butter, but don’t completely melt. Combine with maple syrup, extract and salt until well mixed and smooth. Add in confectioners sugar 1/4 cup at a time until you achieve a runny but creamy consistency. Drizzle over cooled cookies and allow to set before storing.
Cookies will stay good up to one week at room temperature. Enjoy these buttery Yule cookies next to a roaring fire surrounded by friends and family.
